We love a good curry.

This really only takes a few minutes to whip up and is really yummy and cheap.

Ingredients:

2 cans of tuna or chicken drained
a bit of oil/butter/ghee for sauteing 
1onion chopped
1 pepper chopped
3-4 stalks of celery chopped
2 cloves of garlic minced
1 tsp ginger powder
1 tsp indian chili powder (not mexican chili powder)
1 tsp garam masala
1 tsp turmeric
1 tsp cinnamon
1 tsp salt
2 Tbsp ketchup
2-3 cups of greek yogurt * or sourcream

2 cups of quinoa
4 cups water

*to make your own greek yogurt drain 4 cups of plain yogurt overnight in a sieve lined with a cloth, paper towel or coffee filter

Assemble all your ingredients and put your quinoa on to cook.  Usually bring to a boil and simmer for 10 min and let sit for 5 min.  Follow your package instructions.

Then begin to saute your chopped veggies except the garlic.



Here's an easy and fast way to peel your garlic for mincing or chopping.

Take the flat of your blade and press down, until you feel them squish a bit.




the peels should slip right off now.

Now if you haven't already done so time to mince your garlic and get your spices together 'cause you want them to all go in at the same time.






Make an opening in the center of your sauteing veggies (you've been stirring them right?) and dump your spices and garlic in.



just stir them around a little in the middle until you get a nice pungent spicy smell.  30 seconds - 1 min.  Then incorporate them into the rest of your pan ingredients.



continue to saute this mixture for a few minutes until your onions are translucent.  Don't forget to check on your quinoa, burnt quinoa is horrible!

Add your drained tuna.


and chunk it up into small bits... but not tiny flakes... You want a satisfying bite of tuna in your mouth.

Add the ketchup






stir it in

now turn your heat WAY down... you don't want to boil the yogurt or sour cream.  Just heat it.



This is a picture of what my drained yogurt looked like... it got so thick that I had to add a bit of milk to loosen up the dish a bit.  but it was goooooood!


Stir it all in.



Serve over the quinoa and enjoy with raw veggies to help cool your mouth down.  That indian chili can get a little spicy :)

  2. I have a recipe similar to this. Tuna curry in a hurry. Nice on a night when you don't have a lot of time to prep.
